White Chocolate Cupcakes with Peanut Butter Frosting




Here's a recipe for delicious White Chocolate Cupcakes with Peanut Butter Frosting:

Ingredients:

For the cupcakes:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 4 ounces white chocolate, melted and cooled

For the peanut butter frosting:
  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk or cream (as needed for consistency)

Instructions:

  1. Preheat oven and prepare cupcake pan: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.
  2. Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a hand mixer or stand mixer.
  4. Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Incorporate melted white chocolate: Slowly pour the melted and cooled white chocolate into the butter mixture while mixing on low speed until fully combined.
  6. Alternate adding dry ingredients and milk: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  7. Fill cupcake liners: Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
  8. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cupcakes to cool completely on a wire rack before frosting.
  9. Prepare peanut butter frosting: While the cupcakes are cooling, prepare the peanut butter frosting. In a large mixing bowl, beat together the softened butter and creamy peanut butter until smooth and creamy.
  10. Add powdered sugar and vanilla: Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract.
  11. Adjust consistency: If the frosting is too thick, add milk or cream, one tablespoon at a time, until you reach your desired consistency.
  12. Frost cupcakes: Once the cupcakes are completely cooled, frost them with the peanut butter frosting using a piping bag or a knife.
  13. Optional garnish: Optionally, you can garnish the cupcakes with chopped peanuts, shaved white chocolate, or a drizzle of melted white chocolate.
